Chimichurri originates in Argentina, where it is used as a marinade and dipping sauce for meat. We make our chimichurri in either parsley or cilantro using fresh herbs, and an overload of peppers, garlic, and spices. It is versatile and our customers use it widely, on pasta, chicken, veggies, as a bread dip, salad dressing, and in many other ways. It makes a great dressing for both warm and cold potato salad.
